Ingredients:
- 500g fresh mushrooms, washed and sliced
- 2 onions, finely chopped
- 3 tomatoes, pureed
- 2-3 green chilies, finely chopped
- 1 tablespoon ginger-garlic paste
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 tablespoon coriander powder
- 1 tablespoon red chili powder
- 1 teaspoon garam masala
- Fresh coriander leaves, for garnish
- Salt to taste
- 2-3 tablespoons cooking oil
Instructions:
- Heat the cooking oil in a pan and add the cumin seeds.
- Once the cumin seeds crackle, add the finely chopped onions and sauté until golden brown.
- Add the ginger-garlic paste and chopped green chilies, and cook for a few minutes until the raw aroma disappears.
- Now, add the turmeric powder, coriander powder, and red chili powder. Mix well and cook for a couple of minutes.
- Pour in the pureed tomatoes and cook until the oil separates from the masala.
- Add the sliced mushrooms and mix gently to coat them with the masala.
- Cover and cook for about 8-10 minutes on low heat, stirring occasionally.
- Once the mushrooms are tender, sprinkle garam masala and salt. Mix well and cook for another 2-3 minutes.
- Garnish with freshly chopped coriander leaves.
My Tips:
I love to serve this masala mushroom with hot chapatis or steamed rice. The flavors really come alive when accompanied by a dollop of creamy yogurt. Additionally, for an extra kick, I sometimes add a pinch of kasuri methi (dried fenugreek leaves) at the end of cooking.
