Chicken Mushroom Soup

  • 2 boneless, skinless chicken breasts
  • 8 oz of mushrooms (I prefer using a mix of cremini and shiitake)
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 6 cups of chicken stock
  • 1 cup of heavy cream
  • 2 tablespoons of butter
  • Salt and pepper to taste

Step-by-Step Instructions

  1. First, I start by cooking the chicken breasts in a pot of boiling water until they’re fully cooked. Then, I shred the chicken and set it aside.

  6. Finally, I pour in the heavy cream to add richness and simmer the soup for an additional 5 minutes before serving.
