Marinated Mushroom Recipe

For me, marinated mushrooms are the perfect addition to any antipasto platter or salad. Their tangy, earthy flavor adds a unique dimension to any dish. Plus, they are incredibly easy to make. I love experimenting with different herbs and seasonings to create my own signature marinated mushroom recipe. Here’s my go-to recipe that never fails to impress.


  • 1 pound of fresh mushrooms, such as button or cremini
  • 1/2 cup olive oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste


  1. Clean the mushrooms and trim the stems.
  2. In a saucepan, combine the olive oil, balsamic vinegar, minced garlic, oregano, thyme, salt, and pepper. Bring to a simmer over low heat and cook for 5 minutes, stirring occasionally.
  3. Place the mushrooms in a large bowl and pour the warm marinade over them.
  4. Cover the bowl and refrigerate for at least 4 hours, stirring occasionally to ensure all the mushrooms are coated in the marinade.
  5. Once marinated, the mushrooms are ready to serve or can be kept in the refrigerator for up to a week.

I love to serve these marinated mushrooms as part of a grazing platter paired with some crusty bread, cheese, and olives. They also make a fantastic addition to a green salad, adding a burst of flavor and texture. The best part is that the longer they sit in the marinade, the more flavorful they become. I find that they are even better when made a day in advance, allowing the mushrooms to fully absorb all the delicious flavors.
