Miso Mushroom Pasta

Miso mushroom pasta is one of my all-time favorite comfort foods.   • 8 ounces of pasta
  • 2 tablespoons of white miso paste
  • 1 tablespoon of butter
  • 2 cloves of garlic, minced

  • 1 cup of vegetable or chicken broth
  • 1/2 cup of heavy cream
  • Salt and pepper to taste
  • 2 green onions, thinly sliced (for garnish)


  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a small bowl, whisk together the miso paste with a few tablespoons of warm water until smooth.
  3. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute.
  4. Add the sliced mushrooms to the skillet and cook until they are soft and golden brown.
  5. Pour in the vegetable or chicken broth and bring to a simmer.
  6. Stir in the miso mixture and heavy cream. Simmer for a few minutes until the sauce has thickened slightly.
  7. Add the cooked pasta to the skillet and toss until it’s well coated with the miso mushroom sauce.
  8. Season with salt and pepper to taste.
  9. Garnish with sliced green onions and serve hot.
