The earthy flavor of the mushrooms combined with rich, creamy cheeses and savory tomato sauce creates a comforting and satisfying dish that is perfect for any occasion. Today, I’m excited to share my favorite mushroom lasagna recipe with you.
Ingredients:
- 9 lasagna noodles
- 3 cups of sliced mushrooms (I prefer a mix of cremini and shiitake)
- 1 small onion, finely chopped
- 3 cloves of garlic, minced
- 1 tablespoon of olive oil
- 1 24-ounce jar of marinara sauce
- 1 15-ounce container of ricotta cheese
- 2 cups of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of chopped fresh basil
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender. Season with salt and pepper.
- Stir in the marinara sauce and simmer for 5 minutes.
- In a separate bowl, combine the ricotta cheese, 1 1/2 cups of mozzarella cheese, Parmesan cheese, and chopped basil. Season with salt and pepper.
- Spread a thin layer of the mushroom sauce on the bottom of a 9×13-inch baking dish. Place 3 lasagna noodles on top.
- Spread a third of the cheese mixture over the noodles, followed by a third of the mushroom sauce. Repeat layers twice.
- Sprinkle the remaining mozzarella cheese on top.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil and bake for an additional 25 minutes, or until the cheese is bubbly and golden.
- Let the lasagna rest for 10 minutes before slicing and serving.
