Mushroom Lasagna Recipe

I’ve always been a fan of traditional lasagna, but when I tried a mushroom lasagna for the first time, it completely changed my perspective. The earthy flavor of the mushrooms combined with rich, creamy cheeses and savory tomato sauce creates a comforting and satisfying dish that is perfect for any occasion. Ingredients:

  • 9 lasagna noodles
  • 3 cups of sliced mushrooms (I prefer a mix of cremini and shiitake)

  • 1 24-ounce jar of marinara sauce
  • 1 15-ounce container of ricotta cheese
  • 2 cups of shredded mozzarella cheese

  • 1/4 cup of chopped fresh basil
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Cook the lasagna noodles according to the package instructions. Drain and set aside.
  3. In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, and sauté until softened.
  4. Add the sliced mushrooms to the skillet and cook until they release their moisture and become tender. Season with salt and pepper.
  5. Stir in the marinara sauce and simmer for 5 minutes.
  6. In a separate bowl, combine the ricotta cheese, 1 1/2 cups of mozzarella cheese, Parmesan cheese, and chopped basil. Season with salt and pepper.
  7. Spread a thin layer of the mushroom sauce on the bottom of a 9×13-inch baking dish. Place 3 lasagna noodles on top.
  8. Spread a third of the cheese mixture over the noodles, followed by a third of the mushroom sauce. Repeat layers twice.
  9. Sprinkle the remaining mozzarella cheese on top.
  10. Cover the baking dish with foil and bake for 25 minutes.
  11. Remove the foil and bake for an additional 25 minutes, or until the cheese is bubbly and golden.
  12. Let the lasagna rest for 10 minutes before slicing and serving.
