Shitake Mushroom Recipe

Shiitake mushrooms are one of my absolute favorite ingredients to work with in the kitchen. Not only are they packed with flavor, but they also offer a multitude of health benefits. Today, I want to share with you one of my go-to shiitake mushroom recipes that never fails to impress: Shiitake Mushroom and Spinach Stuffed Chicken Breast.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup chopped shiitake mushrooms
  • 2 cups fresh baby spinach
  • 4 cloves garlic, minced
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Using a sharp knife, butterfly the chicken breasts by slicing them horizontally through the middle, but not all the way through, so they can open like a book.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped shiitake mushrooms and minced garlic. Sauté until the mushrooms are tender, then add the spinach and cook until wilted. Season with salt, pepper, and dried thyme.
  4. Remove the skillet from the heat and let the mixture cool for a few minutes.
  5. Once the mushroom and spinach mixture has cooled, spoon it onto one side of each butterflied chicken breast. Sprinkle the mozzarella and parmesan cheese on top of the mixture.
  6. Close the chicken breasts, securing the edges with toothpicks if necessary, and place them in a baking dish.
  7. Bake for 25-30 minutes or until the chicken is cooked through.
  8. For a golden brown crust, broil the chicken for an additional 2-3 minutes.
  9. Remove the toothpicks before serving.
