Wild Rice Mushroom Soup

When it comes to hearty and comforting soups, one of my all-time favorites is wild rice mushroom soup. The earthy flavor of wild rice combined with the rich, meaty taste of mushrooms creates a soup that is both satisfying and nourishing. Whether it’s a cold winter evening or a rainy day, this soup never fails to warm both my body and soul.


For this delicious soup, you will need the following ingredients:

  • 1 cup of wild rice
  • 8 cups of chicken or vegetable broth
  • 1 pound of fresh mushrooms (such as cremini or shiitake), sliced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup of heavy cream
  • 2 tablespoons of all-purpose flour
  • 3 tablespoons of butter
  • Salt and pepper to taste
  • Fresh parsley for garnish


To start, rinse the wild rice thoroughly under cold water. In a large pot, bring the broth to a boil, then add the wild rice. Reduce the heat, cover, and let it simmer for about 45 minutes, or until the rice is tender.

In a separate pan, melt the butter over medium heat. Add the chopped onions and garlic, sautéing until they are soft and fragrant. Next, add the sliced mushrooms and cook until they release their juices.

Sprinkle the flour over the mushroom mixture and stir to combine. Slowly pour in the heavy cream while continuously stirring to create a smooth, creamy base for the soup.

Once the wild rice is cooked, add it to the pot of creamy mushroom mixture. Let the soup simmer for another 10-15 minutes to allow the flavors to meld together. Season with salt and pepper to taste.
