Chicken Thighs With Mushroom Sauce

Today, I want to share with you one of my all-time favorite recipes: chicken thighs with mushroom sauce. This dish is a family favorite and always hits the spot. The tender, juicy chicken thighs paired with the rich, earthy mushroom sauce is a match made in culinary heaven.

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 10 oz cremini mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken thighs with salt and pepper.
  3. Heat olive oil in a large ovenproof skillet over medium-high heat.
  4. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the skillet and set aside. Discard excess fat from the skillet.
  6. Return the skillet to the stovetop and melt the butter over medium heat.
  7. Add the chopped onion and cook until softened, about 3 minutes.
  8. Stir in the garlic and cook for an additional 30 seconds.
  9. Add the sliced mushrooms and cook until they release their juices and become golden, about 5-7 minutes.
  10. Pour in the chicken broth and simmer for 5 minutes, scraping up any browned bits from the bottom of the skillet.
  11. Stir in the heavy cream and dried thyme. Cook for 2-3 minutes until the sauce thickens slightly.
  12. Return the chicken thighs to the skillet and spoon the mushroom sauce over them.
  13. Garnish with fresh parsley and serve hot.

This dish is a perfect harmony of flavors and textures. The succulent chicken thighs soak up the creamy mushroom sauce, creating a mouthwatering combination that never fails to impress. Plus, the aroma that fills the kitchen while the dish is cooking is irresistible.

I often pair this dish with a side of fluffy mashed potatoes or a crusty baguette to soak up every last drop of the luscious sauce. It’s a comforting and satisfying meal that’s perfect for a cozy night in or to impress guests at a dinner party.

If you’re looking for a dish that’s simple enough for a weeknight dinner but elegant enough for a special occasion, this chicken thighs with mushroom sauce recipe is a must-try. It’s a staple in my recipe collection, and I hope it becomes a favorite in your kitchen, too!
