Chicken Thighs With Mushroom Sauce

Ingredients:

  • 6 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 tablespoon butter
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 10 oz cremini mushrooms, sliced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme

Instructions:

  1. Preheat the oven to 375°F (190°C).

  3. Heat olive oil in a large ovenproof skillet over medium-high heat.
  4. Add the chicken thighs, skin side down, and cook until golden brown, about 5 minutes per side. Transfer the skillet to the oven and bake for 25-30 minutes, or until the chicken is cooked through.
  5. Remove the chicken from the skillet and set aside. Discard excess fat from the skillet.
  6. Return the skillet to the stovetop and melt the butter over medium heat.
  7. Add the chopped onion and cook until softened, about 3 minutes.
  8. Stir in the garlic and cook for an additional 30 seconds.
  9. Add the sliced mushrooms and cook until they release their juices and become golden, about 5-7 minutes.
  10. Pour in the chicken broth and simmer for 5 minutes, scraping up any browned bits from the bottom of the skillet.
  11. Stir in the heavy cream and dried thyme. Cook for 2-3 minutes until the sauce thickens slightly.
  12. Return the chicken thighs to the skillet and spoon the mushroom sauce over them.
  13. Garnish with fresh parsley and serve hot.
