- 6 bone-in, skin-on chicken thighs
- 1 tablespoon olive oil

- 1 cup chicken broth
- 1/2 cup heavy cream

- Remove the chicken from the skillet and set aside. Discard excess fat from the skillet.
- Return the skillet to the stovetop and melt the butter over medium heat.
- Add the chopped onion and cook until softened, about 3 minutes.
- Stir in the garlic and cook for an additional 30 seconds.
- Add the sliced mushrooms and cook until they release their juices and become golden, about 5-7 minutes.
- Pour in the chicken broth and simmer for 5 minutes, scraping up any browned bits from the bottom of the skillet.
- Stir in the heavy cream and dried thyme. Cook for 2-3 minutes until the sauce thickens slightly.
- Return the chicken thighs to the skillet and spoon the mushroom sauce over them.
- Garnish with fresh parsley and serve hot.
